One person, start to finish.
Every project gets the person who sold it, designed it and built it. Nothing is handed to a junior after the first call.
I spent six years in London agencies before going independent in 2015. The work got better when the meetings got fewer, and it has stayed that way: a small number of clients at a time, a direct line to me, and a site or a brand that is finished when it says it will be.
Most of my clients are the kind of business you walk into: a roastery, a workshop, a label run from a back room. They need to look as good as what they make, and they need it to work on a phone.
